- 1/2 cup of old-fashioned rolled oats - You can also use steel cut oats or a combo of both. Be sure that the oats you use are certified gluten-free, like we do, if gluten is an issue for you as all oats are not gluten-free.
- 1 tbsp of chia seeds
- 1 tbsp of chopped walnuts
- 1/4 tsp of ground nutmeg
- 1/2 tsp of ground cinnamon
- 3 tbsp of freshly grated carrot
- 1/2 tsp of pure vanilla extract
- 3/4 cup unsweetened plant-based milk - We used unsweetened almond milk.
- 3 tbsp of unsweetened pumpkin puree - We like this brand of pumpkin puree.
- 1 tbsp of pure maple syrup
- an optional dash of pink Himalayan sea salt, or another salt
- an optional sprinkling of raw pumpkin seeds
Instructions
- Add all of the listed ingredients to a lidded jar or another container and stir or shake until everything is well mixed.
- Cover and refrigerate overnight or for at least four hours or so. Your overnight oats can be made and stored in the fridge for a quick breakfast the next morning. And though store well in the refrigerator, they'll taste best if used within about five days.

- You can add more or less maple syrup depending on how sweet you like your oats. And you may also add more almond milk if you prefer a thinner consistency.
