English cucumber or three cups of any cucumber
red onion
cilantro
our dairy-free tofu feta cheese or store-bought vegan feta cheese
one can of chickpeas or home-cooked chickpeas
our tahini dressing with lime or another dressing

- one whole English cucumber or about 3 cups of any sliced cucumber
- 1/2 of a red onion, thinly sliced or about 1 cup of sliced red onions
- 1/2 cup of fresh cilantro, chopped
- about 1/2 batch (7-0z) of our Tofu Feta Cheese recipe or another gluten-free and dairy-free feta cheese, such as this one
- one 15-oz can of chickpeas well-drained, or about 1 cup of home-cooked chickpeas, drained
- 4 servings of our Tahini Dressing with Lime or another dressing - We double the dressing recipe.
Instructions
- First, make a delicious batch of our Tofu Feta Cheese recipe and our Tahini Dressing with Lime.
- Then, in a large-size bowl, roomy enough to toss the salad, combine the salad ingredients: cucumbers, red onions, cilantro, tofu feta cheese, and chickpeas.
