Given our happy waffle making memories, you’d think we’d have multiple models of waffle irons and numerous grades of pure maple syrup to recreate more of those tasty morning memories But until about three years ago, another gadget to stow away in the kitchen seemed like overkill.  That is until one fateful morning, after searching a few websites and reading reviews, we found ours.

In our experience, there’s just something magical about making the Best Ever Vegan & Gluten-Free Waffles.  Maybe it’s because what begins as a wet bowl of batter quickly takes shape into something with lines and edges commanding attention, awe, and toppings… loads of your favorite toppings! When we make these waffles we usually double the recipe since the leftovers freeze well. And whether it be while enjoying a humble bowl of overnight oats, a delicious slice of our practically famous banana bread, or our yummy all in one baked frittata, what you’re eating for breakfast doesn’t matter.   What matters is the experience of sharing a bit of precious time with people you care about at the beginning of your day. So, find where you stashed that beloved iron because it’s time to make some memories!

Ingredients

  • one 14 oz can of unsweetened lite coconut milk or 1 3/4 cups of a creamy unsweetened non­dairy milk - We've found that unsweetened cashew milk is a terrific substitute for lite coconut milk as is unsweetened macadamia milk.
  • 1/4 cup of tahini - We've had good results using this brand of organic tahini.
  • 2 tsp of pure vanilla extract - Here's our favorite trusted brand of organic pure vanilla extract.
  • 2 tbsp of ground flaxseed or flaxseed meal
  • 1 tbsp of apple cider vinegar or freshly squeezed lemon juice
  • 1 tbsp of pure maple syrup
  • 2 cups of gluten-free flour blend - We love this Bob's Red Mill gluten-free flour!
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • 1 tsp of ground cinnamon - Our experience causes us to trust the quality of this brand.
  • 1/2 tsp of ground nutmeg
  • a generous 1/4 tsp of ground cardamom - If you use cardamom often you may want to buy this organic brand in bulk to save.
  • 1/4 tsp of pink Himalayan sea salt or another salt - We use pink Himalayan sea salt because it is rich in trace minerals.
  • optional fresh or frozen berries, plain plant-based yogurt, nuts, and pure maple syrup for topping

Instructions

  1. Begin by preheating your oven to a warming setting of about 200° F to keep your finished waffles toasty and crisp as they accumulate.  Place an empty sheet pan in the oven to have it ready to go as soon as the first waffle is complete.
  2. When it comes to waffle irons, each iron comes with its own set of instructions, so be sure to follow yours. Settings will vary depending on your particular waffle maker and how crisp or soft you prefer your waffles. So, our only instruction here is to turn on your waffle maker to desired temperature setting and allow it to preheat.
  3. Next, in a medium-size mixing bowl, whisk the plant-based milk, tahini, vanilla, ground flax seeds, apple cider vinegar, and pure maple syrup together in a medium­-sized bowl. Set this mixture aside to rest for about 5­-minutes or so while you gather and measure out the dry ingredients.
  4. In a large mixing bowl, stir to combine the dry ingredients of flour, baking powder, baking soda, cinnamon, nutmeg, cardamom, and salt.
  5. Now, slowly add the wet ingredients to the dry ingredients. Stir while scraping the bottom and sides of the bowl well to be sure that everything is fully incorporated.
  6. Yay, the moment you've been waiting for has arrived as it's now time to cook your waffles while being sure to follow the directions provided by your particular model!  Ladle enough waffle mixture into your waffle maker so that the nooks and crannies of the bottom of your maker are full. Close your waffle maker and proceed to cook according to your waffle iron's directions.
  7. As each waffle comes to completion, place it on the sheet pan or other large ovenproof vessel waiting in the warm oven to keep it nice and toasty.  Serve your delicious gluten-free plant-based and refined oil-free waffles with berries, plain plant-based yogurt, and pure maple syrup or other toppings, as preferred.

Notes

  • Use just a dab of additional plant-based milk if your batter seems too thick to pour or ladle.
  • The nutritional content provided below is for the waffles only as topping preferences and quantities of toppings, vary.  Use cashew milk to get these numbers.  Use lite coconut milk for equally delicious results with an increase in the fat.

Since we haven’t tried using sunflower seed butter in place of the tahini, we cannot say for sure that it will work, Lee, but it’s a pretty good bet that it will; same goes for any other kinds of nut or seed butter.     1. Most any flour should work just fine in this recipe, although to be 100% clear, we have not used wheat flours to test it out.
