How to Melt Chocolate

If you’ve ever read about melting chocolate, you may have heard mention of words like tempering, or even scarier, chocolate that seizes!

In this recipe, we share how to melt chocolate in the most straightforward way ever—in the microwave!

First, add your chocolate to a medium-size, microwave-safe bowl.

Then, heat your chocolate in brief 20 to 30-second increments until it begins to appear just a bit melted.

Once your chocolate begins to look shiny and melted, stir in between the 20 to 30-second heating increments until it stirs completely smooth, without lumps or chunks.

And of course, if you prefer to melt your chocolate on the stovetop, use the double boiler method.

For the double-boiler method, place a heat-safe bowl or pan to hold the chocolate above boiling water to melt using secondary heat. Then, carefully stir until all lumps and bumps melt away.

Either of these methods will work well for melting chocolate for a batch of our dairy-free gluten-free bacon bark.

Ingredients

Instructions

  1. If you haven't already done so, bake a quick and easy batch of oil-free, no mess, Vegan Fakin' Bacon.   It takes only minutes to make but you must allow it time to cool completely before using as a topping in this recipe.  Alternatively, you may use a store-bought crumbled vegan bacon topping.
  2. To melt the chocolate, use the double boiler method described in the article above or do the following method to melt the chocolate using a microwave: Add the chocolate to a medium-size, microwave-safe bowl. Next, heat the chocolate in brief 20 to 30-second increments until it begins to appear just a bit melted. Once your chocolate begins to look shiny and melted, stir between the 20 to 30-second heating increments until it's smooth, without a trace of lumps or chunks.
  3. Then, using a spatula or rubber scraper to help it along, pour the melted chocolate onto a prepared parchment paper-lined pan or baking sheet. Smooth out the chocolate until it's only about 1/4 to one-half an inch thick. There's a helpful method for spreading the melted chocolate in the notes below.
  4. Now, sprinkle on the Fakin' Bacon and, if you like, a tiny bit of sea salt.  If you like, you can gingerly give the Fakin' Bacon a gently press here and there to be sure it sticks to the melty chocolate. Place the chocolate and plant-based bacon candy into the freezer for at least 15 minutes, or until frozen solid.
  5. Once your chocolate is frozen, break it apart into irregular shapes to resemble random pieces of bark. Your Chocolate Bark with Bacon Candy will keep nicely in the refrigerator or freezer in an airtight container for about a month.

Notes

  • How To Spread Melted Chocolate Evenly: Try tipping your pan back and forth to help spread out the chocolate bark to a thin layer—when chocolate is nice and melty, gravity often works better than using a spatula.
  • Quantity: This recipe is super flexible—make as little or as much as you need with ease by melting more or less chocolate.
  • Gifting: Stack a few pieces of Chocolate Bark with Bacon Candy in a clear glass jar, top with a bow to give as a thoughtful homemade gift!
