Are you feeling tired and sluggish after you eat rather than refreshed and ready to go the distance? Next time, make a mega Green Veggie Sandwich with Cucumber, Sprouts & Avocado! First comes the bread. We all know that above and below a good tasting sandwich lies a terrific tasting bread. We use a basic toasted buckwheat bread for ours, but feel free to use one of your favorites. You could even enjoy this combo in a wrap or tortilla if you prefer. By the way, we use buckwheat bread to keep our sandwich gluten-free.
Next, comes the mayo. In our opinion, our Oil-Free Cashew Mayonnaise does more for a sandwich than a mayo has the right to do. We think the whole-wide-world would love this mayo and all of that good stuff, but the choice of what to spread on your sammie is entirely up to you. However, you’re bound to benefit by choosing to skip eating gobs of refined oil found in most mayonnaise. Can you tell that we highly recommend this mayo?
Now that we’ve covered the bread of choice in the best mayo ever, it’s time to layer up the lovely green veggies. We used organic mixed Spring greens, spinach, cucumbers, sprouts, and avocado on ours. Some sweet green pepper would taste great, too, If it’s a veggie you happen to enjoy, by all means, go wild and pile high, dear friend!
We top off this mega green goodness with a sprinkle of our favorite homemade classic Cashew Parmesan Cheese Topping. Just a sprinkle adds terrific umami. Umami is a Japanese word to describe a layer of deep and satisfying flavor.
And on the side, there’s nothing like seasoned roasted chickpeas for a fun little bite to munch along with your veggie sammie. We like the blend of seasonings we use in for the roasted chickpeas in the recipe. No matter how many versions we try, we return to this one. So, you’ve just got to try these for a tasty side!
So when you try this tasty sandwich matchup, we think you will look at green veggies with new appreciation! This sandwich is satisfying in such a way that it makes you look at greens with a different perspective. Greens are so much more than a salad filler. Greens are made in such a way that our body knows exactly how to utilize every ounce of them that we eat! Need a boost of feel-good fuel? Then reach for this delicious sandwich filled with energizing greens! It starts with a couple of slices of your favorite bread on which you then slather on some of our homemade oil-free mayo. Then pile on the organic mixed Spring greens, baby spinach, crispy cucumbers, life-affirming sprouts, and creamy slices of avocado! Oh, and to finish it off we sprinkle on a generous helping of our classic Cashew Parmesan Cheese Topping! We like to add that right after we spread on the mayo to be sure to get some of the flaky, cheesy, goodness, in each flavor-filled, delightful, bite!

a generous smear of plant-based mayo - We highly recommend making a batch of our oil-free cashew mayonnaise - it's a game changer!
a sprinkling of our classic Cashew Parmesan Cheese Topping
slices of fresh avocado
a handful of mixed Spring greens or another salad blend of choice
a generous bunch of baby spinach leaves
cucumber, thinly sliced
alfalfa sprouts or another sprout for crunch and nutrients - We grew ours in a jar!
a few slivers of green onion
Instructions
To make yourself a mega Green Veggie Sandwich with Cucumber Sprouts & Avocado, begin by preparing your bread of choice however you prefer. Bt preparing we mean, toasting. We crisp our bread up real nice and then smear a nice dollop of our oil-free cashew mayonnaise followed by a sprinkling of decidedly cheesy Cashew Parmesan Cheese Topping and then piling on layers of the green veggies listed in the ingredients list. Slice your sammie in half to make it easier to handle and to pace yourself as you munch through the delicious combination of satisfying and healthy fixings! Serve with a side of roasted chickpeas, chips, oil-free tarragon dill potato salad or colorful confetti pasta salad!

I’m working on a version to change it up a bit and make the recipe my own and can hardly wait to share it with everyone!
