To make this delicious dairy-free sour cream topping, all you need is 3-ingredients; give it a mix, and BAM – in less than 5 -minutes, it’s tofu crema time! And since you can make this condiment from shelf-stable pantry ingredients – it’s a recipe that’s handy for fresh sour cream whenever you need it! This recipe makes about one + one-half cups of vegan tofu sour cream or about 6 to 8 (approximately 2-oz or 1-tablespoon-sized) low fat, non-dairy servings.

Ingredients

  • 12-oz (shelf-stable) box of, extra firm or firm, Mori-nu silken tofuAlternatively, tofu found in the refrigerated section also works well. See the note below when using a refrigerated type of tofu.
  • 1 to 2 tbsp of fresh lemon juice  - Freshly squeezed is best, but here's a terrific shelf-stable bottled version that comes in handy!
  • 1 tbsp of vinegar - We usually reach for Braggs Organic Apple Cider Vinegar, but any vinegar you have on hand will do.
  • optional salt to taste

Instructions

  1. Mix all of the ingredients in a blender for a minute or two or until the consistency is smooth and creamy.  Alternatively, you can also whip your tofu sour cream by hand using a whisk - or use an immersion blender or food processor.
  2. Taste and adjust the tart flavors by adding more lemon, vinegar, or both - and, as always, adjust the salt to preference. Chill your homemade sour cream in a covered container until ready to serve.

Notes

  • In this recipe, we use shelf-stable tofu because of the convenience of keeping the possibility of sour cream in the pantry! Most refrigerator varieties of tofu will also work in his recipe, except for the high-protein super-firm types of tofu which are way more dense.
  • This recipe for low fat tofu sour cream usually thickens up a bit after it has chilled in the refrigerator.
